The original Tiki Taco on West 39th Street is a 2,136 square foot fast casual concept with limited indoor seating that worked well enough to justify a second site.
The Troost location is a 1,510 square foot rehabilitation of a building previously used as a coffee shop. Pendulum provided interior layout and design, food service equipment design and coordination, mechanical, electrical and plumbing coordination, structural design assistance, permitting and outdoor patio seating design. At 1,510 square feet the patio is not an amenity. It is the difference between the covers the concept needs and the covers the building allows.
The first location proved the concept at 2,136 square feet. The second had to deliver the same covers out of 1,510, which is why the patio, the equipment layout and the permitting path were treated as the design problem rather than the finishes.
